Breakfast Salads: Try Eating Your Veggies Again

Some of the hardest things during the cold weather? Exercising, drinking water, and finding ways to eat greens when all you want is something warm in your stomach. Here’s a crazy idea for you, how about eating a salad for breakfast?

To out there? Come on. You gotta mix up your breakfast groove. Your breakfast smoothie was the jam during those months when the weather was in the 90s before 8 a.m. Now though, it’s a lil tough to get excited for a cold morning drink when you don’t even want to lift the covers off. Instead of drinking your morning energy, stick a fork in it.

I thought the idea was a lil out there, but once I tried it, I was winter hooked. Juicing is seriously a pain in the you know what. So many veggies needed. The constant grocery shopping, and don’t get me started on the juicer cleaning. I started taking my greens in powder form because I just couldn’t deal anymore.

The breakfast salad is the answer my friends. We’re just rushing around so much. Work, errands, and finding ways to squeeze in a healthy lifestyle. Multi task your snacks and meals. The worst is filling your kitchen with fresh, healthy foods, and opening up the fridge to discover those half used bell peppers you meant to finish. 

Why waste food when you can make yesterday’s quinoa part of your breakfast salad along with your kale, bell peppers, and the am ingredient, an egg. These are all my random suggestions. It is the beauty of a breakfast salad. Take your carrots you love dipping into your hummus. Have them for breakfast. You can see where I’m going with this. 

The breakfast salad will make your life easier, help you avoid eating the exact same leftovers the next day, and my favorite, shake up your winter morning. Enough of the gab, looking for some inspiration to motivate while you’re grocery? Look at some of these breakfast salads. Tell me you can’t wait to eat your veggies instead of juicing them.

Add 1 tsp olive oil to a nonstick pan over medium-high heat. Sauté 8 asparagus stalks cut into 1-inch pieces and 3 oz diced Canadian bacon until asparagus is bright green, about 3 minutes. Whisk together 4 tsp olive oil and 2 tsp each white balsamic vinegar and Dijon mustard, and season with pepper and kosher salt to taste. In a bowl, combine asparagus, Canadian bacon, 1 thinly sliced small shallot, and 5 cups curly endive, torn into bite-size pieces. Toss with dressing. Top each serving with 1 poached egg and cracked pepper. Serve with an English muffin, if desired.





In a blender or food processor, combine 3 Tbsp Greek yogurt, 1/4 cup plus 2 Tbsp feta cheese, 1/4 cup low-fat milk, and freshly ground pepper to taste. Process until smooth. In a bowl, toss together 5 cups spring mix; 1 small cucumber, peeled, seeded, and thinly sliced; 3 oz smoked salmon cut into 1/2-inch ribbons; and 1/2 cup broccoli sprouts. Drizzle with dressing and garnish with a few red onion slices, 1 tsp each sesame and poppy seeds, 2 tsp capers, and 1/2 oz bagel chips.







Using a strainer, rinse 1 cup quinoa under cold water. Add quinoa, 2 cups water, and pinch of salt to a medium saucepan and bring to a boil over medium heat. Boil for 5 minutes. Turn the heat to low and simmer for about 15 minutes, or until water is absorbed. Remove from heat and fluff with a fork. Let quinoa cool to room temperature. In a medium bowl, whisk the juice of 1 large lime, 3 tablespoons honey, and 2 tablespoons finely chopped fresh mint together until combined. In a large bowl, combine quinoa, blueberries, strawberries, and mango. Pour honey lime dressing over the fruit salad and mix until well combined. 


Breakfast veggies are served folks. Eat up before the madness of the holidays starts.

Celebrity Trainer Harley Pasternak’s Famous Breakfast Smoothie

Some of you may have heard of Harley Pasternak before- he’s a fitness guru, most commonly known for shaping up some of Hollywood’s leading ladies like Jessica Simpson, Katy Perry, and Megan Fox. 

He’s also known for introducing healthy habits to women all over. Some of his tips include walking 10,000 – 14,000 steps a day, drinking a gallon of water, and embracing breakfast smoothies! We love his smoothie recipes and wanted to share his most popular one with you.  Check out his simple, 6 ingredient smoothie recipe below!
Harley’s Breakfast Smoothie
Ingredients:
5 raw almonds

1 red apple

1 banana

3/4 cup nonfat Greek yogurt

1/2 cup nonfat milk

1/4 teaspoon cinnamon (optional)

Directions:
Super simple-- all you need to do is combine all ingredients in a blender, Vitamix, or food processor, and blend until you reach your desired consistency.


Try this smoothie as a daily breakfast to start your day feeling great!

Green Granola

As you might have learned by now, I love hydrated snacks!  When I saw a recipe using dehydrated kale in a not so conventional way, I had to give it a try myself.  A little skeptic, I took my first bite...yum!!! It has a nice balance of that kale chip crunch, chocolate and that familiar granola taste you expect when eating granola.  Plus who doesn't want another way to sneak in those greens!

I made a few changes to the recipe and it turned out great!  I hope you all make it as well, it wont disappoint you.  If you have a dehydrator, it will be a piece of cake.  If you don't, don't worry your oven will do just fine.


Green Granola
(adopted from choosingraw and eatingbirdfood)

  • 3 cups of kale, washed, de-stemmed and torn into bite-size pieces
  • 5 pitted medjool dates
  • 1/2 cup almond butter
  • 2 cups gluten free oats
  • 1/4 cup water
  • 1 teaspoon cinnamon
  • ½ teaspoon sea salt
  • 2 tablespoons cacao or cocoa powder
  • 1/3 cup cacao nibs
  • 1 teaspoon vanilla
  • ½ cup dried cherries, blueberries or cranberries (optional)
  • ¼ cup unsweetened coconut flakes (optional)

1. Blend together almond butter, water, dates, cacao/cocoa, vanilla, salt, cinnamon.
2. Combine oats, kale, cacao nibs, and optional items into a large enough mixing bowl.
3. Massage almond butter mixture into kale mixture.  Work it all together, get dirty with your hands and use all the mixtures to massage together.
4. If you have a dehydrator, spread the mixture onto a Teflex lined dehydrator sheet.  Dehydrate at 115 degrees for 6-8 hours.  At this point the mixture should be half way dry and stuck together.  Transfer to mess dehydrator sheet and continue for 2 more hours.
4b. If you are using an oven, spread the mixture onto a silpat-covered baking sheet and bake for about 50 minutes on your oven's lowest temperature (typically 200 degrees Fahrenheit).  Stir a couple times during baking.  Also around the 45 minute mark check for burning of kale, it can happen super fast.  Baking times will vary.

I added my granola on top of a spinach protein smoothie for an extra crunch and extra greens.  Tell me what you do with your granola!

To eat Breakfast or not to eat Breakfast?

Is that a question you struggle with every day?  Or maybe it is something you worry about when you run out of time or 'forget' to do in the morning.  If you answered yes to either of these questions, then maybe this interesting study can put your mind at ease.

***Please keep in mind this is just informative information.  At the end of the day you are in charge of your body and can practice whatever  you believe is right and best for you.  I am posting this information to just expand your mind and make you think possibly outside of the box.  So many people are stick in one way of thinking.  I am using this post to provide you with information you may not have thought of before or provide you with more evidence on what you are doing is the correct way and you shouldn't change a thing :-) ***


Last week, in the New York Times Blog (yes the NYT has a blog too, so cool!) under the health a diet section there was an article that presented a good argument on whether or not having breakfast does actually aid in weight loss.  You can find the original article here, but I am going to summarize and point out facts I found to be interesting.

"Americans have long been told that routinely eating breakfast is a simple habit that helps prevent weight gain.
Skipping breakfast, the thinking goes, increases hunger throughout the day, making people overeat and seek out snacks to compensate for missing that first – and some would say most important – meal of the day.
“Eating a healthy breakfast is a good way to start the day,” according to the Web site of the United States surgeon general, “and may be important in achieving and maintaining a healthy weight.”

The American Journal of Clinical Nutrition has put together some studies to see what is true, does eating breakfast help in weight loss or at the end of the day is the person who eats breakfast eating more calories than the person who doesn't.

Three different test groups were performed.  All of the groups got the same amount of calories.  The differences were, one group you normally ate breakfast were told to stop, the group that normally skipped breakfast were told to starting eating breakfast and the third group was told to keep their same eating habits.  (Please keep in mind all the adults tested are considered overweight).

In numerical order here is how each group stacked up in weight loss.

Most weight lost: 
1. Group that skipped breakfast
2. Group that started to eat breakfast
3. Group that changed nothing

In conclusion, breakfast eaten or not eaten had no effect.  The reality is the groups that changed their eating habits had the most success.

Our bodies are very smart and can adapt easily.  This might prove and encourage you to change up eating habits every once in awhile if you feel like you are at a stand still in your weight loss goals.

What I do find to be extremely important is to remember your overall goal is to be healthy, that should be your motivation in your decision.

Plantain Pancakes (grain free, dairy free, soy free)




Like most of you, I like to take a look on instagram and pinterest to see what little trends and new ideas/alternatives people are exploring and trying out for themselves.  

One particular item that has caught my attention is the idea of a very simple grain free pancake.  For awhile there was a trend of making them simply out of bananas and almond butter.  This is a great idea for a low carb lover but it doesn't particular catch the eye of someone not wanting so much fat, even if it is good fat.  

I feel the newest trend out there can satisfy both the person looking for a low carb and one looking for low fat...thus I introduce to you...

PLANTAINS

They are similar to bananas but have a lower fat and sugar content than bananas.  Most of their calories do come from carbohydrates but they are the good carbs low on the glycemic index.  Listed below is some helpful information on why you shouldn't be afraid of the carbs in plantains. (the key is they have a good amount of fiber...woohoo)

Total Carbohydrates

Carbohydrates provide energy for your body and are the preferred source of energy for your nervous system and your brain. Sugars, starches and fiber are the three types of carbohydrates. A 1-cup serving of sliced cooked plantains contains 48 grams of carbohydrates, or about 16 percent of the daily value for carbohydrates for people following a 2,000-calorie diet.

Sugars

Sugars are simple carbohydrates and are the most quickly digested form of carbohydrates. Plantains contain less sugar than bananas, but still contain 21.6 grams of sugar in each 1-cup serving. Unlike added sugars, you don't need to limit your consumption of the naturally occurring sugars found in fruits and vegetables.

Starches

Plantains contain more starches than any other type of carbohydrate, with 22.9 grams per 1-cup serving. Although starches don't taste sweet, they are made of three or more sugar molecules bound together. They take longer to digest than sugars since these bonds need to be broken by digestive enzymes during the digestive process.

Fiber

The final 3.5 grams of carbohydrate in each serving of plantain consist of fiber. This is 14 percent of the daily value for fiber of 25 grams. Fiber is made up of sugar molecules, but your body can't break the type of bond used to form fiber, so it passes through your digestive tract intact. Although you can't digest fiber, it provides a number of health benefits and lowers your risk for constipation, diverticulosis, hemorrhoids, heart disease, high cholesterol and diabetes.


Now that you are more educated on plantains lets get to the good stuff...a high protein plantain pancake made simple!  This recipe is from my own experimentation, feel free to alter to fit your dietary needs.

PLANTAIN PANCAKES
(serves 1)

-1/2 very ripe medium plantain
-1 cup raw spinach
-1/4 cup liquid egg whites
-pinch backing powder
-1 tsp vanilla extract
-sweeter to taste


1. Blend all ingredients in blender
2. cook on stove over medium to high heat, flipping when pancake starts to bubble.

3. My batch gave me four pancakes
4. Serve on plate and add toppings galore!
Sugar Free Chocolate Syrup
-1 TBSP almond milk
-2 TBSP unsweetened hershey's cocoa
-pinch cinnamon for balancing sugar levels

Overnight Oats

Overnight oats is one of the easiest, fastest, nutritious, keep you fullest, breakfast (maybe) in the entire world.

WHAT YOU NEED:
-bowl or mason jar
-rolled oats (not quick or steel)
-milk or alternate milk of choice

-NOTHING ELSE!!!!

The night before take your bowl or mason jar, scoop 1/2 cup oats into the bowl.  Cover the oats with milk, roughly 2/3 cup, and place in frig.  During the night the oats will soak up the liquid and become soft.  In the morning take out your oats and dress it up as you would dress yourself.  

OAT DRESSING IDEAS:
-berries
-banana
-cinnamon
-scoop of protein powder
-nuts
-chia seeds (add in the night before so they have a chance to soak up liquid too-might want more liquid if you add chia seeds)
-feel free to add more milk if you need to get things moving a little more



MY PERFECT OVERNIGHT DRESSINGS:
-cinnamon
-stevia
-scoop of vanilla sun warrior protein powder
-raw almond butter
-mashed banana
-stir it all in and devour!!!!

Yum!
